Don't be deceived by the title - this isn't a book for beginners. However, if you are an experienced baker and want to take a really serious approach, it's very authoritative.

The French eat better bread than anyone, and Eric Kayzer is an absolute authority on the subject. This isn't a sourdough-specific book (most of the recipes use fresh baker's yeast) but with a bit of thought most of the recipes can be adapted, and it is excellent on shaping techniques.
